It is not one. The fruit is still a persimmon; \u201capple\u201d mainly describes the way it is eaten: firm, crisp and cut into wedges rather than left until the flesh is soft enough for a spoon.<\/p>\n<p>That texture is exactly why many people who dislike very soft persimmons enjoy this type. The flesh stays compact and sweet without becoming jelly-like. Sicilia Agrumi lists Kaki Mela during the autumn season, normally from around October, when the fruit is actually available.<\/p>\n<h2>Firm persimmon and soft persimmon are different experiences<\/h2>\n<p>Persimmon varieties behave differently as they ripen. Some are strongly astringent while firm because of soluble tannins and become pleasant only after further ripening or de-astringency treatment. Others can be enjoyed while still crisp.<\/p>\n<p>For a shopper, the easiest distinction is practical: an apple-type persimmon is chosen to be eaten firm; a traditional soft persimmon is often left until the flesh becomes very tender. Neither is automatically better. They simply suit different tastes.<\/p>\n<h2>Why call it apple if it is botanically unrelated?<\/h2>\n<p>Popular food names often describe an obvious sensory resemblance rather than a family tree. Here the comparison is to crunch and convenience: wash the fruit, remove the leafy calyx and slice it like an apple.<\/p>\n<p>The idea of an actual apple-persimmon cross still circulates online, but the fruit sold under this name is not such a hybrid. Persimmons belong to the genus Diospyros; apples belong to a completely different botanical family.<\/p>\n<h2>How to tell when it is ready<\/h2>\n<p>Do not wait for it to become soft. Look for well-developed colour, intact skin and flesh that is firm without feeling woody. If it is sweet and crisp when bitten, it is doing exactly what this type of persimmon is supposed to do.<\/p>\n<p>If it produces a strong drying sensation in the mouth, astringency may still be present and the fruit may need more time or proper de-astringency. Small marks on the skin, on the other hand, are not automatically signs of poor flesh; natural fruit often carries superficial traces of weather and branches.<\/p>\n<h2>How to eat it<\/h2>\n<p>The easiest way is in wedges. Depending on the product and your preference, the skin can be eaten after washing or removed. Its firm texture also makes it far more useful in salads than a very soft persimmon.<\/p>\n<p>Try it with fennel, orange and walnuts, or with a salty cheese. Persimmon sweetness works particularly well against acidity and salt. Thin slices can also sit comfortably on an autumn cheese board without turning into a dessert.<\/p>\n<h2>Is Kaki Mela the same as Sharon fruit?<\/h2>\n<p>Not necessarily. \u201cSharon fruit\u201d is a commercial name associated with persimmons made suitable for eating firm, while the Italian expression caco mela is used more broadly for crisp persimmons. Different cultivars and post-harvest methods can sit behind names that look almost interchangeable on a shop shelf.<\/p>\n<h2>How to store it<\/h2>\n<p>If very firm, leave it at room temperature for a few days and taste how it develops. Once it reaches the stage you like, refrigeration slows further change. Do not bury it under heavy fruit: crisp flesh can still bruise.<\/p>\n<p>The most interesting thing about an apple persimmon is the stereotype it breaks. Not every persimmon has to become extremely soft.
