Grate the two peels side by side, however, and the aromatic difference is obvious. The word lime covers several Citrus species and hybrids, while common lemons belong mainly to Citrus limon. If allowed to ripen further, some become more yellow. Lime may feel more aromatic and sharp, with a fragrant edge that works especially well in tropical cooking, cocktails and dishes containing avocado, coriander or coconut.<\/p>\n<p><img alt=\"Lime vs lemon: differences in flavour, aroma and cooking\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/www.siciliaagrumi.it\/wp-content\/uploads\/2024\/11\/DSC8872-8-7-7.jpg\"\/><\/p>\n<h2>Can you substitute one for the other?<\/h2>\n<p>Often yes, but the dish will change. In a vinaigrette or marinade, the acidic function remains similar; in a dessert where zest is central, the aromatic difference is obvious. A fruit looking \u201cnatural\u201d is not enough information on its own. It is a good example of a dessert where lime is not only supplying acid: its perfume defines the character.
