Observe the white lines that delimit a segment. Insert the blade just inside a membrane, towards the center; repeat on the opposite side. The fillet will come off. Proceed by rotating the fruit. There is no need to cut both membranes if you use the &#8220;book&#8221; technique: after the first cut, slide the blade under the segment and lift it against the next membrane.<\/p>\n<h3>How to recover all the juice<\/h3>\n<p>In the end, a membrane structure will remain. Squeeze it with your hand over the bowl: the juice is perfect for seasoning fillets, preparing a vinaigrette or melting the bottom of a pan. Even the caps cut at the beginning can be squeezed.
