First rule: open it when it is ready

A hard avocado does not become creamy because you blend it for longer. Press it very gently: when it gives slightly without leaving a deep dent, it is close to ready. Hass often darkens as it ripens; Fuerte may stay green, so touch is usually more reliable than colour.

If you have several fruits, do not force them all to ripen together. Keep some at room temperature and slow the others down in a cooler place once they are close. It prevents the familiar problem of having five perfect avocados on Tuesday and none for the rest of the week.

1. Avocado toast with just enough lemon

Mash ripe avocado with a fork and season with a few drops of lemon, salt, pepper and extra-virgin olive oil. Lemon should brighten it, not turn it sour. Good toast and ripe tomato are enough to make it a complete breakfast or light meal.

2. Simple guacamole

Use avocado, lime or lemon, finely chopped onion, tomato and salt. Do not blend it perfectly smooth: a few pieces left intact make the texture much more enjoyable. When the fruit is ripe and flavourful, there is no need to bury it under spices.

3. Avocado, orange and fennel salad

This is one of the clearest ways to bring Sicilian citrus and tropical fruit onto the same plate. Slice fennel thinly, peel the orange carefully and add avocado last. Olive oil, salt and a little orange juice are enough. Tarocco or Moro also adds a beautiful colour contrast.

4. Cold pasta with avocado and cherry tomatoes

Dress pasta once it has cooled slightly with tomatoes, basil, olive oil and a little lemon zest. Add avocado at the end in pieces large enough to stay intact. It is ideal in warm weather and can be prepared ahead, provided the avocado waits until serving time.

5. Avocado crostini with Sicilian almonds

Blend avocado briefly with olive oil and lemon, spread it on toasted bread and finish with chopped almonds. The nuts add crunch without competing too much with the fruit. For a saltier version, add an anchovy or a small piece of sun-dried tomato.

6. Avocado and prawns with citrus

Cooked prawns, avocado cubes, orange, lemon and parsley make a quick starter. The rich texture of avocado softens the savoury shellfish, while citrus keeps the dish clean and fresh. Dress it shortly before serving.

7. Chickpea and avocado hummus

Add a ripe avocado to chickpeas, tahini, olive oil and lemon. The result is silkier than standard hummus and needs less added oil because the fruit already brings creaminess. Serve with raw vegetables, toast or inside a sandwich.
