Orange bundt cake: soft, fragrant and made with fresh juice

An orange cake is a simple bake, which is exactly why the fruit has to taste like something. A bottle of flavouring cannot replace fresh zest, and the juice itself changes noticeably from one orange variety to another. Moro gives a deeper character, Navel a rounder sweetness and Tarocco often sits comfortably between the two.

Ingredients for a 24 cm ring tin

Use 3 eggs, 180 g sugar, 250 g plain flour, 100 ml mild seed oil, 120 ml strained orange juice, the zest of one or two oranges with edible peel, 16 g baking powder and a pinch of salt. For a light glaze all you need is icing sugar and a little more juice.

Zest matters more than juice for aroma

Most of the recognisable citrus oils are concentrated in the coloured outer peel. Grate only that layer and leave the bitter white pith behind. If you use Sicilian Tarocco oranges or another seasonal variety, check that the peel is suitable for eating whenever it enters the recipe.

Method

Whisk eggs and sugar until pale and voluminous. Slowly add the oil, then the juice and zest. Fold in sifted flour and baking powder only until combined. Pour into a greased and floured ring tin and bake at 175-180°C for about 35-40 minutes.

Why orange cake sometimes turns rubbery

It often happens when the batter is overworked after adding flour, or when far more juice is poured in because “more orange” sounds like a good idea. Excess liquid changes the balance of the formula. If you want stronger aroma, increase the zest carefully rather than adding unmeasured juice.

Tarocco, Moro or Navel?

Moro brings stronger juice and may darken the crumb slightly; Navel is sweet and easy-going; Tarocco has a balanced aromatic profile. There is no compulsory choice. Let the citrus season make the decision for you.

Glaze or icing sugar?

A juice glaze reinforces the citrus note and keeps the surface a little moist. Icing sugar is simpler and leaves the cake drier. For breakfast, a third option is often the best: add nothing and serve the cake with fresh orange segments on the side.
