Citrus peel powder: preparation and anti-waste uses

The peel powder brings the scent of citrus fruits into the pantry without taking up the freezer. Works in desserts, flavoring salt, teas and marinades. However, it is not a way to make any peel edible: we only start from fruits with peel declared edible, washed and dried carefully.

Prepare the peels

Take thin strips of the colored part, avoiding the albedo as much as possible. You can collect them over the course of two days in the refrigerator, in a dry container, then dry them together. Do not use moldy, blackened or wet pieces.

Mix different citrus fruits

Orange, lemon and mandarin create a complex profile. For the first test, dry them separately: you can dose the blend after tasting them.

Oven drying

Arrange the peels in a single layer and use 50-60 °C, preferably ventilated, leaving a gap if the oven retains a lot of humidity. It takes from two to four hours depending on thickness. Turn them over and check: they must break cleanly, not bend.

Dryer

Set a low temperature following the appliance instructions. The process is more uniform and doesn’t take up the oven, which is useful when you’re processing an entire cassette.

Grind without heating

Let cool completely, then use a clean coffee grinder to pulse. Sift and regrind the large pieces. Heat disperses aromas, so take breaks. A slightly coarse powder is perfect for salt and herbal teas.

Conservation

Seal in a dry jar, in the dark, and prepare quantities that you will use in a few months. If the powder forms clumps, smells musty, or shows condensation, discard it. A small food desiccant bag can help, but is not a substitute for thorough drying.

Label

Write citrus and date. The color tends to fade before the product is unusable – the scent is a better indicator.

How to dose it

Start with half a teaspoon in a cake or a pinch in salt. Add it to yogurt, biscuits, breadings, black tea and marinades. Rehydrate for a few minutes in liquids when you want a more diffuse aroma; use it at the last minute if you are looking for a strong and immediate perfume.

Start from the number of people and how many times you will actually use the ingredient. For a test or a single recipe, a small format is more rational; a larger cassette or package makes sense when you have already planned more preparations.
