A good non-alcoholic cocktail shouldn’t imitate an alcoholic drink badly. It can have its own structure: acidity, aroma, a bitter edge and bubbles. Pink grapefruit offers almost everything on its own; rosemary and syrup are used to finish, not to hide it. The following recipe is fresh, not very sweet and easy to multiply for a jug.

Ingredients for two glasses

You will need 180 ml of filtered pink grapefruit juice, 80 ml of very cold sparkling water, 20-30 ml of rosemary syrup, ice and two thin wedges to decorate. For the syrup, bring 50 g of water to a light boil with 50 g of sugar and a sprig; turn off after two minutes and let cool.

The sugar dose is not fixed

Taste the fruit before measuring out the syrup. At the beginning of the season a few more milliliters may be needed; with ripe grapefruits less is needed. The drink must maintain a dry finish, not become a cloying drink.

Preparation in the glass

Fill the glass with ice, pour in the juice and syrup, then stir for a few seconds. Top with sparkling water and give it a final gentle swirl. Just crush a small sprig between your fingers before inserting it: it releases the scent without filling the drink with needles.

How to avoid a medicinal aroma

Rosemary is powerful. Don’t blend it or leave it in the syrup for hours. A short infusion gives a Mediterranean note; excessive contact brings resinous bitterness and covers the grapefruit.

Carafe version for six people

Multiply the juice to about 550 ml and prepare 90 ml of syrup, but add it gradually. Store the base in the refrigerator. Only add ice and sparkling water when serving, otherwise the drink will dilute and lose its bubbles.

Simple variants

For a more herbaceous profile, replace half the rosemary with lemon thyme. A slice of ginger adds spiciness; a few drops of lemon increase acidity. If you want a softer version, complete with neutral soda and not with tonic, which would add its bitterness to that of the fruit.

A discreet salty edge

Mix fine salt and very little sugar, moisten only half the edge and place it in the mixture. Those who drink can choose whether to look for contrast or keep the sip clean.

The raw material makes the difference

Squeeze the grapefruit just before serving and keep it cold in a closed container. A heavy, juicy fruit produces more yield and requires less correction. With a box you can prepare cocktails for guests and use the remaining fruit for breakfast, salads or jam.
