Pachino is not the name of just one form of tomato. The PGI denomination includes four types, grown in a specific area of ​​south-eastern Sicily: Ciliegino, Costoluto, Tondo Liscio and Grappolo. Learning to distinguish them makes the purchase more sensible, because a bruschetta, a sauce and a salad do not require the same consistency.

Cherry tomato

Small, round and often harvested in bunches, it is known for its sweetness, juiciness and practicality. It is eaten raw, quickly sautéed, roasted whole and turned into a sauce. The peel supports short cooking well, while the pulp releases a tasty base.

Smooth round

It is round, regular and consistent. Its structure lends itself to salads, fillings and preparations in which the tomato must maintain its shape. It can be harvested with different ripening colours, from greener to red.

Bunch

The fruits are gathered in clusters and offer a useful balance between pulp and juice. They are versatile: raw, on a pan, on pizza and in quick sauces. The scent of the rachis alone does not guarantee freshness; always observe the integrity and consistency of the tomatoes.

PGI does not mean unique variety

The denomination links product, territory and specifications. Reading the type and origin is more precise than calling each sweet tomato simply Pachino.

How to choose and store

Buy the type that’s right for your dish and use it when it’s ripe. At home, avoid refrigerators that are too cold for tomatoes to be consumed early: the cold attenuates the aroma. In summer or for longer supplies, a cool place and daily checking are more important than an absolute rule.
