Sicilian almond paste cookies: recipe, history and the secrets of Pasta Reale

Sicilian almond paste cookies look almost too simple until you try to make a really good batch. The ingredient list is short, yet the difference between a dry biscuit and a soft, fragrant pastry with a lightly crisp surface comes down to the texture of the dough and a few minutes in the oven. In Sicily they appear in pastry shops all year round, beside espresso and on family trays at celebrations, and every bakery has its own small variation.

Why they are also called Pasta Reale

Pasta Reale is a traditional name connected with Sicilian almond confectionery. There are several stories about the exact origin of the name and not all can be documented with the same certainty. What is clear is that the same broad family of almond mixtures lies behind biscuits, marzipan fruits and many regional sweets. The almond pastries sold by Sicilia Agrumi are made artisanally with local almonds, honey and citrus notes.

Ingredients for about 20 cookies

For a balanced home recipe use 250 g finely ground almonds, 200 g sugar, about 60-70 g egg white, the finely grated zest of half a lemon or one orange with edible peel and, if you like, a teaspoon of honey. Icing sugar, whole almonds or a little candied fruit can be used for decoration. Add the egg white gradually: this is the point where the final texture is decided.

The dough should be soft, not runny

Mix almonds and sugar, add the zest and work in the egg white a little at a time. The right dough is soft and sticky but can still be shaped with slightly damp hands. If it becomes too loose, the cookies spread in the oven; if it is too firm, the centre loses the moist texture that makes these pastries distinctive. It is better to stop early and add a few drops more egg white only if necessary.

Resting is worth the wait

Once shaped, refrigerate the cookies for at least two hours; many pastry makers prefer a longer rest. The surface dries slightly while the centre remains soft. That contrast also helps create the characteristic little cracks during a short bake. It is not only a visual trick: resting genuinely changes the texture.

Baking: one minute too little is better than five too many

Bake in a preheated static oven at about 170-180°C for 10-15 minutes, watching the colour rather than the clock alone. The edges should take on just a little colour while the centre stays tender. They will still feel very soft when they come out; they firm as they cool. Waiting until they already look completely “biscuit-like” in the oven is one of the easiest ways to dry them out.

Lemon, mandarin or orange

One of the pleasures of almond paste is the way it carries different citrus aromas without losing its identity. Lemon zest is bright and direct, mandarin rounder, orange sweeter. Sicilia Agrumi also offers artisan variations scented with citrus, a natural reminder of how easily almond and citrus traditions meet in Sicilian pastry.

How to keep them soft

Once cold, keep the cookies in a tightly closed tin or container away from heat. Air is the main enemy of their soft centre. A well-made almond paste cookie does not need to be buried under icing sugar: the almond should remain the main flavour. With coffee or a Sicilian dessert wine, these are the sort of small sweets that disappear from the tray remarkably quickly.
