Making pistachio cream at home is mostly an exercise in patience with a food processor. Pistachios gradually release their oils and move from crumbs to flour and eventually a paste. Adding too much liquid early may look helpful, but it can actually make a perfectly smooth texture harder to achieve.
Ingredients for one jar
Use 200 g unsalted shelled pistachios, 80 g icing sugar, 80-100 g good white chocolate and roughly 50-80 ml warm milk, added gradually. A small pinch of salt keeps the flavour from tasting flat.
To roast or not to roast
Very light roasting deepens aroma but also darkens the colour and changes the fresh character of the nut. Warm the pistachios gently for a few minutes or use them raw. Do not expect both a vivid green and a deeply roasted flavour; those goals often pull in opposite directions.
Blend until a paste forms
Process the nuts alone in pulses, stopping to scrape down the sides. They first become flour and then start to clump. Once a paste appears, add the sugar and melted white chocolate. Only then add warm milk a little at a time until the consistency suits you.
Why homemade pistachio cream is not fluorescent green
Natural pistachios contain green, yellow and brown tones from the skin. Chocolate and milk make that green even paler. Nothing is wrong with the result. The important test is whether the cream tastes of pistachio, not whether it resembles a highlighter pen.
Storage
This version contains milk and is not a shelf-stable industrial spread. Keep it refrigerated in a clean container and use it within a few days. Let it stand at room temperature briefly before serving, as the cold makes it considerably firmer.
