The citron surprises those who open it expecting a giant lemon. The pulp is little, while the rind and white part occupy a large part of the fruit. Precisely the thick albedo, which is often discarded in other citrus fruits, can here be crunchy, aromatic and pleasant. It is eaten in slices, seasoned and transformed into candied fruit and drinks.

Citron and lemon are not the same thing

Citron has different shapes, scents and proportions. The juice is limited and acidic; the peel is very thick. Don’t buy it thinking you’ll make a jug of lemonade: the value lies above all in the external part and its aroma.
