To prepare this recipe you will first need to make Pesto Genovese. In a blender blend the basil, toasted pine nuts, garlic, pecorino cheese and season with plenty of extra virgin olive oil and a little salt. Once you have prepared the Pesto Genovese you can then combine it with the couscous previously soaked in warm water, the diced cherry tomatoes, and the pitted and chopped Crushed Green Olives.
