Pistachio cake: soft, fragrant and actually tasting of pistachio

5 August 2026

A pistachio cake does not need to be bright green to taste of pistachio. In fact, the natural colour of the crumb is usually far more discreet than many shop-window desserts suggest. For a clear flavour you need good pistachios, enough of them in the batter and supporting aromas that do not take over.

Ingredients for a 22-24 cm tin

Use 200 g plain flour, 120 g finely ground Sicilian pistachios, 160 g sugar, 3 eggs, 100 ml mild seed oil, 120 ml milk, 12-16 g baking powder and a pinch of salt. A little lemon zest is optional and should be kept subtle.

Grind without turning the nuts into paste

Running a processor for too long warms the pistachios and releases their oil. Pulse briefly and, if useful, add a spoonful of the recipe flour while grinding to help keep the mixture dry. Leave a small portion coarser for the top of the cake.

Keeping the crumb light

Whisk eggs and sugar until pale, then work in the oil and milk. Fold in flour, ground pistachio, baking powder and salt without overmixing. Once the dry ingredients are added, stop as soon as there are no dry streaks. Too much mixing develops gluten and gives a firmer, less tender cake.

Bake without drying it out

Bake in a static oven at 170-175°C for roughly 35-45 minutes, checking the centre with a skewer. Tin size and individual ovens make exact times unreliable. When the skewer comes out with only a few dry crumbs, take the cake out; waiting for a very dark top often sacrifices moisture in the middle.

Does it need a filling?

The cake is good plain, but for a richer dessert split it and spread a thin layer of pistachio cream. If the spread is sweet, reduce the sugar in the sponge slightly. A lightly sweetened ricotta filling creates a particularly Sicilian contrast.

A note about colour

Not all pistachios have the same green shade. Variety, ripeness, roasting and the amount of skin left on the kernel all change the final colour. A vivid green cake is not automatically more authentic. Your palate is a better judge than your eyes.

Storage

Unfilled cake keeps for two or three days well covered in a cool place. Once filled with fresh cream it belongs in the refrigerator, but let each slice sit out briefly before eating. Pistachio aromas are much easier to perceive when the dessert is not ice-cold.
