Ingredients Sicilian Lemon Chicken

The amount we have chosen-about 600 g of chicken-will be enough for four people, making sure that everyone gets a fair portion. The whole preparation will take you more or less 20 minutes, counting of course the time for cooking the chicken and making the sauce.

Get all the ingredients in the appropriate amounts and then we are ready to begin!

– 600 g chicken breast
– flour 00 q.b.
– oregano q.b.
– the zest of one lemon
– 100 ml lemon juice
– 200 ml water
– 20 g cornstarch (maize flour)
– 10 g sugar
– 10 ml soy sauce
– fine salt q.b.

Sicily Lemon Chicken Procedure

The preparation of lemon chicken starts with the citrus fruit itself. You will need to obtain the grated zest of one lemon and then extract about 100 ml of juice (you will probably need two lemons). Set the juice and zest aside and take care of the chicken breast. The meat slices will need to be cut into fairly thick cubes, becoming bite-sized morsels.
Helping yourself with your hands, flour the morsels and shake off the excess flour. Meanwhile, place a frying pan on the stove and turn on the flame, adding a drizzle of olive oil. Pour the chicken breasts into the pan and brown until each morsel becomes nicely browned. This should take you about 5 minutes, then you can move the chicken to a plate and keep it aside. Then start preparing the lemon sauce by pouring the cornstarch, sugar, soy sauce and water inside a bowl. Stir with the help of a whisk and then add the lemon juice and zest as well. At this point, pour the sauce into the same pot used for the chicken. Cook for a minute, just long enough for it to start congealing, then add the chicken bites again. Stir well and adjust the salt, finishing with a small addition of oregano. Leave the chicken on the heat for about 3 minutes, waiting for the sauce to adhere and manage to lacquer the morsels. Turn off the flame and place your lemon chicken inside a serving dish. It should be served warm, so that the scent given off by the lemon remains strong and immediately recognizable. Depending on the amount of lemon you add, the flavor will be more or less sour. You will have to choose according to your personal taste, tasting while cooking to avoid the final result not convincing you as it should. Lemon chicken, like most traditional dishes, gets better every time you prepare it. This is because you learn to know the amounts, adjusting each seasoning as best you can.
