The following ingredients are enough for a cake large enough for eight to ten people. So, in case you are expecting more guests, you may want to increase the amounts slightly. – 4 eggs
– 200 g sugar
– 250 g philadelphia
– 300 g flour
– 2 lemons
– 16 g baking powder for cakes
– 3 tablespoons seed oil

Lemon and Philadelphia Cake Procedure

It’s time to get down to preparation, starting with getting all the ingredients together. Place them on the kitchen counter and weigh them already in advance, so the whole process will be much quicker and easier. The first thing to do is to take care of the lemons. You will need to squeeze the juice from both, remembering to grate the zest from one of them. Separately, in a fairly large bowl, crack open the eggs and add the sugar. Whisk until the mixture is white and well frothy, the so-called “whipped eggs.”
Add the philadelphia and seed oil, stirring from the top down to prevent the eggs from disassembling. Gently, also add the flour (previously sifted), baking powder, lemon zest and juice. Carefully mix all the ingredients together so that they create one smooth, lump-free dough. At this point, prepare the cake pan and line it with baking paper. Pour the batter inside, making sure it is well leveled.
Bake at 180° for about 25 minutes, remembering to preheat the oven. Since every cake has its own baking and every oven is different, five minutes after the timer goes off you’ll want to check with a toothpick to make sure the cake is dry inside.
