Product made from fresh local tuna previously salted and placed in large "vats" for curing. Then in the second stage after curing it is taken out, cut into pieces or fillets and marketed in jars, in oil with chili pepper, otherwise only with brine, or in a vacuum-packed bag. It can be used as an appetizer,cut into small cubes , (possibly you can desalinate it previously in running water as it is too strong in salt ), seasoned with olive oil ,red chili pepper and some good fresh sweet onion, and perhaps combine with a tomato and cucumber salad that dampens the saltiness. Another recipe for salted tuna is for the preparation of a good peperonata, with us this dish is called "GHIOTTA. " Basically you put chopped peppers and potatoes to cook in a frying pan,plus plenty of onion with capers and cherry tomatoes, halfway through cooking add the pieces of salted tuna and red chili pepper to taste.

N.B: Since the tuna is too salty, put little salt when cooking the ingredients.
