RECIPES: PEPERONATA WITH TUNA BUZZONAGLIA

To prepare the Peperonata, start by processing the peppers. Rinse, seed and thinly slice about 1 kg of red, green and yellow peppers. In a nonstick skillet pour plenty of oil and add a red onion also thinly sliced and a red pepper. Once browned, add the peppers, cover with a lid and cook for 15 minutes. Then pour in about 400 gr of tomato puree, season with salt and pepper and continue cooking for another 10 minutes. Then add 300 gr of Tuna Buzzonaglia, a handful of capers and a few pitted black olives. Cook for ten more minutes and finally serve on a plate with a few slices of toasted bread for scarpetta.
